Classic Beef Sausage
Not very often seen any more, this is a pure beef sausage made with local Red Devon beef from Peacock Farm, Westhay. A wonderful meaty sausage, especially for those who can't eat pork.
Pork & Cider Sausage
Based on a traditional pork and apple sausage, we have developed our own recipe incorporating award winning Somerset Scrumpy, from Roger Wilkins farm at Mudgley. Blended with herbs and spices to give a heavenly, moist, Somerset sausage. This is one of our original creations that has stood the test of time.
Beer Fest Banger
This sausage was originally made for the Wedmore Beer Festival. It is a blend of Somerset pork and Red Devon beef from Peacock Farm, Westhay, combined with our own mix of herbs and spices with some mustard seeds for a slight kick. Although originally made with stout we now use Golden Challice, a superb local ale made by Glastonbury Ales. A great sausage if, like me, you love your beer!
Beef & Stilton Sausage
Made for a customer who had tasted a Beef & Stilton Pasty. He thought the flavours were great so asked if we could make him a Sausage with the same ingredients. Having never put cheese in sausages before we were a little bit wary, but he was right the flavours are amazing. Watch out for this one while cooking as it spits a bit due to the cheese, but thoroughly worth trying.
Pork, Wild Mushroom & Smoked Garlic Sausage
For those of you that love garlic, this is the one for you. Made with our own home reared pork, and locally picked field mushrooms (when in season), with local oak smoked garlic. If we didn't live in somerset it could almost be french.
Pork Cranberry & Caramelised Onions Sausage
Made with our own Gloucester Old Spot Pork we have added Cranberry juice and Rose Farm caramelised onion chutney to make a great sausage for the BBQ
Vegetarian Sausagemeat with Sweetcorn & Sweet Chilli
Just so as not to leave anyone out, we have made a sausagemeat suitable for vegetarians. Not quite knowing where to start we enlisted the help of a friend who is vegetarian. Her complaint was that all vegetarian sausages taste the same. So with a little help from some sweet chilli and sweet corn, we have made a sausagemeat even she thinks is brilliant!
Vegetarian Sausagemeat with Apple & Cider
As a follow on from our success with our sweetcorn & chilli, to make this one a little different we have added some local scrumpy from Roger Wilkins farm at Mudgley and some fresh, locally grown apples.
