This was probably our biggest challenge yet. Made for a customer who has been vegetarian all her life, she has recently found out she is coeliac. So taking our gluten free base mix we developed, for our other sausages. We replaced the meat with leeks, parsnips, onions, potatoes and apples. Giving her a sausagemeat that ticks all the boxes.

Just so as not to leave anyone out, we have made a sausagemeat suitable for vegetarians. Not quite knowing where to start we enlisted the help of a friend who is vegetarian. Her complaint was that all vegetarian sausages taste the same. So with a little help from some sweet chilli and sweet corn, we have made a sausagemeat even she thinks is brilliant!
